    The obvious infusion would be basil or other aromatic herbs. also chilli, citrus, charcuterie, tomato or a tomato basil combo. Im not sure if any of my suggestions would be problematic with reactions with the rennet or citric acid?

    I made the cheese sauce on the stove a couple times, took to long. A light bulb went off, I turned and remembered I have a VitaMix, You can make Soups in it and it gets hot. So I cut up the cheese(s) I like to experiment. I only use water, I put the water in and teh Sodium Citrate mix it up for a few seconds, turn off the Vitamix, I add the cut up cheese or cheese's, set the dial to the soup setting that turns off in 8mins. or just set it up to high time it. Pour it out when its done. I like the fact I can set it and forget it while the Vitamix is doing its thing. I've added taco seasoning to it or sariachi sauce or Cayenne Pepper, dried Djon mustard powder to it. sky is the limit. I like to mix asiago cheese in with another cheese, like smoked goude or cheddar.

    HELP.. My gummies aren't that sticky on their own. BUT, every time I coat them with sugar/citric acid (exactly in a manner you demonstrate in the video), they become very moist and "sweaty" after a few hours due to the citric acid (I tried coating only with sugar and it's not causing any problem).

      It won’t. Gelatin is not at all the same and it needs to be heated to activate it. You will just end up with grainy texture and it won’t hold together.

      Nope, UltraStik is a modified starch designed to create adhesion. Chickpea flour does not have the same properties.

      You can certainly try the fries, could be great. Not sure about potato flavoring since the celeriac flavor is so good on its own. Also there is a mild sweetness that may or may not go with potato so definitely need testing.

    With the gummies should it be 3-1% of the weight of the Ingredients or the weight of the finished gummies? Since a fair n variable amount of the water evaporates while prepping on the stove so I can't predict well how many grams of gummies I'll end up with.

    Uggghhh. I wish I’d seen this video yesterday. I just did a ground lamb gyro today. I made it like a little meatloaf and sliced it all up and had to put it in the broiler to crisp it up. Your way is so much much better. That was absolutely brilliant, making a mold in the refrigerator like that and putting it on the skewer. I always do the chicken and the pork and the beef on skewers like that, but I did not know how to do the ground lamb. That is sheer brilliance! I am super impressed.
